Cava, an emblematic sparkling wine of Spain, has a rich history dating back to the nineteenth century. Its origin is in the Catalan region of Sant Sadurní d’Anoia, where businessman Josep Raventós produced the first bottle of cava using the traditional method of bottle fermentation, similar to that used in the French region of Champagne.
The Cava region is mainly located in the northeast of Spain, in the autonomous community of Catalonia. This area, located between the mountains of Montserrat and the Mediterranean Sea, offers a Mediterranean climate with mild winters and hot summers. The calcareous and clayey soils provide the ideal conditions for the cultivation of the grape varieties used to make Cava.
There are several types of Cava that vary depending on the ageing time and the production method:
- Cava Brut Nature: No added sugar, dry and with a minimum of 0-3 grams of sugar per liter.
- Cava Brut: Dry, with a maximum of 12 grams of sugar per liter.
- Cava Extra Brut: Very dry, with a maximum of 6 grams of sugar per liter.
- Cava Brut Reserva: Aged for a minimum of 15 months in the bottle.
- Cava Brut Gran Reserva: Aged for a minimum of 30 months in the bottle.
The grape varieties used in the production of Cava are mainly the following:
- Macabeo: It provides freshness and floral aromas.
- Xarel·lo: Contributes to the structure and acidity of Cava.
- Parellada: Provides softness and delicacy.
- Other secondary varieties include Chardonnay and Pinot Noir.
