Elaboration: Manual harvest. Film maceration and fermentation in stainless steel for 36 days. Ageing with lees for 6 months in stainless steel tanks. Malolactic fermentation in the same tank. After the ageing in the tank, Terces Blanc is aged in oak and acacia barrels for a further 8 months. Clarified, filtered and bottled.
Service: Serve it at 8ºC.
Pairing:Given its structure and complexity, it has a very wide range of combinations. Fatty fish, game, truffle dishes, cured cheeses… Harmonies by affinity or contrast within the glass.
