Elaboration: The grapes from 25-year-old vines planted in slate soil were harvested by hand. The different varieties fermented separately in stainless steel fermentation tanks refrigerated at a temperature of 20ºC. Two pump-overs were carried out daily, decubating 20-25 days after the start of fermentation, depending on the variety. The extension of the vatting was determined by tasting. Malolactic fermentation was carried out in tanks. It underwent minimal clarification and filtration treatments before bottling. Aged for three months in oak barrels.
Service: Serve between 14 and 16ºC.
