Production: The grapes were carefully selected by hand, harvesting each of the varieties separately at their optimum moment of ripeness.
Fermentation was also carried out separately in stainless steel tanks. Refrigerated at a temperature of 24ºC/26ºC with a single daily pump-over. Racked 30-40 days after the start of fermentation depending on the variety. Finally, malolactic fermentation was preceded by the coupling of the two varieties and it was aged for 1 year in French oak barrels and then 3 years in the bottle.
Service: Serve at 16ºC.
