Vinification:
Must obtained with a very gentle pressing, in order to protect the finesse and floral aromas that characterize it. Partial fermentation in stainless steel vats and in large egg-shaped clay jars in order to achieve maximum complexity. Subsequent aging in these containers with their own lees for several months in order to give fat and volume in the mouth to a variety that is characterized by its good acidity and freshness.
Pairing: Due to its good acidity and freshness, this wine has a wide versatility. It goes perfectly with any fish or seafood dish, seasoned with lemon or without. It also does so with a wide range of cheeses, as their good acidity cleanses and attenuates their oiliness. The same goes for any dish cooked with sauces with a lot of fat or sour cream. It also attenuates the fat of a good duck, high-fat pork, or other similar high-fat dishes.
Its good acidity also goes well with any dish made with a good tomato-based stir-fry, where acidity complements each other. Obviously, any sausage dish with tomato bread, pizzas, pastas are good allies, or simply to take it alone as a good accompaniment.
Service: Serve between 6 and 8ºC.
