Elaboration: Base wine fermented spontaneously in 500 L old barrels, aged for 12 months on lees. In the following harvest, fresh must from the same plot is added just at the beginning of fermentation, and bottled to begin the second fermentation in the bottle (traditional method). Aged for a minimum of 40 months in the bottle before disgorgement, which is done manually and without freezing. It is not filtered, clarified or added to sulphites or external yeasts.
Service: It is served at a cool temperature, between 6 and 8 °C.
Pairing: Snacks, seafood, grilled fish and Japanese cuisine (“platos de cocina japonesa”). In addition, according to a French source, it offers olfactory notes of nuts and green olives, and the palate has live carbonic with a warm sensation, ideal with mushrooms, noodles, nougat coulant and seafood with cocha.
