Elaboration: Manual harvest in boxes of 12 kilograms of grapes, from vineyards aged between 25 and 40 years. Controlled temperature, prior to fermentation in cold rooms specially designed for this purpose, for a period of 24 hours
Service: Serve between 15 and 17ºC. It is recommended to oxygenate it before serving.
Pairing: Beef stew and pepper entrecote, in short in a rather hearty dish.
