Elaboration: The term “grape” means that the wine has not been filtered or cold stabilized. This is done in pursuit of the objective of enhancing its uniqueness. In addition, it is not ‘refreshed’ through the usual system of nurseries and soleras, with periodic sacs and dews in scale, but using the same vintage. This purpose is the clearest representation of our Serra de Montilla and the native yeasts that favour the appearance of the flower veil.
