Elaboration: Traditional method. Long-aged sparkling wines (100 months). First, they make a base wine with a mixture of varieties, ferment it in stainless steel, and age it for 8 months in barrels and stainless steel. It undergoes a second fermentation on lees in the bottle for 8 and a half years.
