Introduction to wine: In our land, the godello variety is known as crow’s eye or white prieto picudo, when by mistake it was thought that it was a mutation of the Leonese ink prieto picudo. It was here for a long time, not always well valued, nor very widespread. At Casar de Burbia, we are committed to this variety to produce whites with ageing potential. Casar de Burbia Godello is our first white and not the simplest. This has been made with godellos from the medium-sized farms of Valtuille de Arriba, at an altitude of 600 metres, where the soils are dominated by clays and medium-sized stones. The altitude of these vineyards means that ripening is slower and the harvest is delayed by an average of 20 days compared to the lower plots.
Soil type: clays and medium-sized stones. Soils richer in organic matter, for this reason the vineyards present there, were planted in trellis, manual harvesting.
Elaboration: After a pre-maceration of the cold must, we carry out a low-temperature fermentation in stainless steel tanks that extends over an average of 45 days, depending on each harvest. Subsequently, we carried out a long ageing with their fine lees, of approximately eight months. In this wine we initially work with several tanks, with the intention of working on the aroma and the mouth separately. Finally, to assemble and achieve the best in each of its tasting phases.
