Elaboration: Organic, biodynamic viticulture, minimal intervention, no added sulphites. Spontaneous fermentation with native yeasts. Divided into three parts: fermentation in old French oak barrels (≈500 L), fermentation in clay amphorae, vinified with the skins for 14 days in stainless steel tanks (orange wine). Aged for about 6 months on lees in each container.
Service: Serve between 8 and 12 °C (common between 8 and 10 °C or 10 and 12 °C depending on reference).
Pairing: Very versatile—appetizers, seafood, white and blue fish, sushi, fish rice, vegetables, white meats, pasta with fish sauce and oysters, among others.
