It comes from the San Salvador Vineyard, planted more than 70 years ago by Nemesio, along a gentle slope that rises to an altitude of 700 meters. We wanted to make a wine of great elegance and complexity and for it we only use the grapes from the highest part of this vineyard, which means that we are talking about a microplot of only 0.4 hectares. The result is a wine where elegance and balance prevail, and where time also plays an important role in its development. A tribute to our father, representing the character and way of understanding the world of wine.<br \/>\n<strong>Elaboration: <\/strong>In order not to interfere with the subtlety and delicacy of the grapes that grow here, we work in the cellar with very short macerations and ferment with their own yeasts in small capacity tanks. The idea is to obtain all the fruit and balance that Sant Salvador offers us, the most stable vineyard of all we work with.
