Elaboration: The manual harvest usually begins in mid-October and the grapes are transferred refrigerated to the cellar to preserve all their aromatic complexity. Once there, the must will ferment at a controlled temperature and the malolactic fermentation will last until the end of the year.
Service: Serve between 17 and 18ºC.
