Elaboration: Strict selection of spikes, fermentation in large wood (3 weeks), ageing for 53 months in new French and American oak barrels.
Tasting: Cherry red, complex nose, round and mineral mouth, long finish.
Service: Serve between 14 and 18 °C (approximately).
Pairing: Meats (steak, lamb, suckling pig), stews, sausages, cured cheeses.
