Elaboration: The grapes were carefully selected manually at the time of harvest to achieve the optimal and homogeneous degree of ripeness. The must was macerated with the grape skins for ten hours at a temperature of 7ºC and then drained by gravity and fermented for 21 days in stainless steel tanks at a temperature of 13ºC until a graduation of 10% vol alc. fermentation was completed in new medium-roasted Allier oak barrels. The wine remained in the barrels in contact with its lees for five months. Prior to bottling, it was filtered and stabilized at a temperature of -3ºC.
Service: Serve between 8 and 10ºC.
