Elaboration: Following the parameters that govern organic viticulture. Manual harvest. Use of own yeasts selected at temperatures below 27ºC. Open pumping over at the beginning of the F.A. and closed at the end. Aged in 500-litre French oak barrels from Allier, Tronçais and Nevers for nine months.
Service: Serve between 15 and 17ºC.
